How do I disable Windows 10 Home auto-update / or just set it to download without install?

You can NOT change how the updates are done on the home version.

As for the defragging, I would not do that, as it normally works when the system is not in use.

Why do you want to turn off the defragging?
For the defrags I have Defraggler by Piriform.

So, I guess, I am stuck here by the updates... I would install them at periodic time, at the evenings, I guess.
Third party defrags do not go well with Windows 10.
If you just let Windows 10 do it things, it will defrag the system when not in use.

Go to start, type defrag and then select it.
It will tell if defragging is needed or not.
You can set Windows Update to work during your sleeping hours. Go to Start > Settings > Update and Security > Change Active Hours
Unless you use or upgrade to Pro version, you have no control over Windows Updates. I use third party software to disable the Windows Update service. I use a small portable program called Windows Update Blocker that disables the service for you and attaches a read only to that service so that Windows can't turn it back on. Turn it on and then turn it off when you want to update. You can then update on your schedule instead of Windows schedule. I find this works really well and very easy to use.
