My Mom's Apple Run Cake
Recipe for Apple Rum Cake
From: My Mom / 1966
4 cups diced fresh apples (Gold or Red Declicous Apples or both is what they use)
2 cups sugar
3 cups flour
2/3 cup cool oil
2 eggs
2 teaspoons soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup chop walnuts (Black walnuts taste better)
1/3 cup rum
Mix together apples, sugar and spices then let stand one hour. (apple mixture)
Sift together flour, salt and soda.
Bet eggs - add to apple mixture
add oil mix well
next add flour mixture small amount at a time -mixing well
add walnuts
And last add the rum
Bake in a grease , floured loaf , or angel food pan
for 1 hour or until done in a 350 degree oven
Let cool
Cut it into bread like slices
*Good with cool whip on top*
I have had this every year and man is it good. Mom used to make it as gifts for everyone each year for years because everyone wanted it so bad. I think she made like 50 cakes at a time and then seal them real good and put them in the freezer.
The cake keeps for a long time too. That is if you don't eat it.
