I think you misunderstood the question, for instance i open regedit I click on the + to expand HKEY_CLASSES_ROOTS,and i see a folder called staroffice i click on that to highlight it, and i see on the right hand side: name {default} and data (value not set)

now would it be safe to delete staroffice?

If you are sure of it , just right click on the folder icon for staroffice and delete. It might be prudent while you have it highlighted go to Registry on toolbar and Export the registry file. Hang on to it for a few days and be sure everthing is running ok before deleting it.

I never had Staroffice, i don't know how the keys got there.
Is it ok to back up the entire registry at once instead of individual keys.

Yes. When you first boot up each day you create a registry backup. If you feel more comportable backing the entire registry up that is okay. It will probably tell you there was already a backup made, do you want to make another one? Go ahead.
