Recycle bin filled with .bak files

When I checked my recycle bin I found approximately 60 files with the extension ".bak". I realize they are backup files, but I have no idea how they got there.I never deleted them. Can someone explain please? Thanks!

The date all these files were deleted was 12/28/06. The original location is Documents and Settings; however, when I right click on Properties it says "origin:Outlook Express." Date modified is 12/24. Now I'm questioning myself as to whether I deleted them. They wouldn't automatically delete - would they?
When I restore a file it does not give me the option to open it with Notepad or Wordpad. It merely puts it back it back in Outlook Express. Then I can open it and delete it again (for good) if necessary.
One of the file names is verio.bak

As an email??
No, they are in my local folders.
