That's up to you. What do you want on each drive as far as file types etc. You could just set them all up as one large partition on each drive and get partition magic. Then you would be able to size them and do whatever you want at a later time.

It's probably more trouble than it's worth to have 3 HDs on one system. Take out the smallest one and sell it, give it to a friend, or something. You just going to run out of IDE cable slots.

I wouldn't partition the smaller drive at all. Maybe split the 40 gig into 2. Partitioning does not really buy you anything anymore. It is more for your organization than anything else.
This is all assuming you have at least Fat32 for the file system.
