Hi, what will a Pentium M 1.73GHz run at when compared with a P4 desktop CPU? A game I want to run has recommended spec of 2GHz CPU but that will obviously be a desktop CPU.

The "M" only shows that it is a "mobile" processor, versus a desktop's CPU, which does not have the "M" (and can be upgraded.)

If your game "recommends" a 2ghz CPU, it is still possible that the game may run on a 1.73ghz processor (but slower, of course), but I would check the other requirements, such as RAM and video card as well.
