MS Exchange Message Fomat

I'm sure there is a simple answer to a simple question. However, I am not familiar with exchange and don't use it so the answer eludes me. A friend of mine (who's machine I don't have access to) is having problems displaying HTML e-mail. As in Outlook you can go to tools>options. But, in exchange there is no mail format. Where can she change message formats in exchange.
