So, usually I leave my computer on, boot it down into "sleep" and turn off the screen, because on my computer it is far easier to leave applications open then to attempt to reopen them.

But lately... I open my computer in the morning, and everything runs just fine, except I have "no network connection" until I restart my computer. Which is VERY annoying because it takes about 5000 years, sometimes a couple attempts, etc. (512MB, 1.6GHz AMD Athlon, good graphics card, 120 gig hd)...

Any, ideas of what could be going on so I can fix it?

See if you have this setting.
Start> Run> type: devmgmt.msc then hit OK.
Click + beside Network adapters. Right click on your adapter and select Properties. Click on Power Management tab and uncheck the box:
Allow the computer to turn off this device to save power. Then OK.
