I can be in the middle of anything, a game, a paper being written, or a job being done... my windows update will automatically install an update, but sometimes will not ask me if I want to restart my PC.. it will automatically shut me down and restart.

I thought there was a way to disable it, but I can't find anything. I know that in Windows XP I could do so using the Group Policy service.. however, I cannot find a GP in Vista.

Does anyone have a clue as how to stop this from happening?

I feel like I am missing something here.

The best way is to change the auto windows update behavior.

Control Panel>Windows Update>Change Settings

Now select "Download Updates but let me choose whether to install them" Hit OK.

Now you control when updates are installed.
