Connecting roku to projector that with rca input

How can I connect my roku with a HDMI to my projector via rca input the cheapest easiest way?

Hello and welcome to TSG!!

The Roku Express+ has Composite connections. I have one of these, though I use it with HDMI.

Your best bet would be to use an actual device (Roku or other) that actually has composite video output.

You could try using an HDMI to composite (IE: RCA) adapter, but I doubt it will work. You will need an actual converter type adapter, not just a simple cable. The problem lies in the video resolutions used over HDMI. In most cases, especially from a Roku which is likely streaming, these will be 720P or 1080P. Composite video resolution 480i at best. And if the projector only uses composite video input, then it likely doesn't support an HD input signal.
