You could try using Ghost Installer, Im personally not quite familiar with it, but it uses an xml interface for designing the installer and you can specify what you wish to install from that, I think that this might suit your needs, give it a whirl.
Unfortunately I think that it will only bundle the instalation programs (and would be a very complicated way of bundling the software), so the installation programs of acrobat reader, would still be interactive. My advice is simply zipping the applications and then when you want to install them again or on another computer you unzip it from there, and install them one at a time... as I dont believe there is a way to get rid of the installation wizards of the programs.
Possibly there is a way to program a small script that will automize the install process though, if you really want everything to be completely automatic, but this is more trouble than its worth in my opinion.
